Day 37: The Day Abby Lost Her First Tooth

It was exciting.
  • bowl of Multigrain Cheerios mixed w/ Rice Krispies in 1% milk (breakfast)
  • 2 handfuls of dry Golden Grahams
  • 1 bottle of water (during run)
  • 1/2 6 oz. container of yogurt w/ wheat germ
  • PB&J on brown oatmeal bread, glass of 1% milk, healthy double chocolate chip muffin (lunch)
  • another muffin, 1% milk (they're really good -- see recipe below)
  • 2 slices of bread (fresh out of the oven, who can resist?) w/ SB ... and another muffin (this one put me over the top)
  • 2 chicken enchiladas, rice, water (dinner)
Healthy Double Chocolate Muffins
My friend Eliza posted this on Facebook and I tried two batches today. I made alterations to the recipe the second time around and that is what I'm posting here.

1 cup whole wheat flour
3/4 cup ground flax seed
1/2 cup wheat germ or oat bran
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 cup cocoa powder
3/4 cup semisweet chocolate chips
1 cup fat free buttermilk
1 cup pumpkin puree
1 cup brown sugar
1 egg
1 teaspoon vanilla

Oven at 400. Grease 12 muffin cups. Combine flour, flax, wheat germ, soda, baking powder, cocoa, and chocolate chips in large bowl. In another bowl combine wet ingredients until smooth. Gently stir wet ingredients into dry until combined. Bake for 20 minutes.
